Matcha recipes: Matcha Gelato: A Matcha version of a classic sweet and cold Italian ice cream, our Matcha Gelato is as simple to make as mix, chill, and let harden! A great treat for any occasion, this gelato is completely perfect for a hot summer day.

[Ingredients]

Aiya Cooking Grade Matcha........................ 1 tbsp
Milk..................................................................... 2 cups
Granulated Sugar........................................... 1/3 to 2/3 cup
Condensed Milk.............................................. 1/3 cup
Grapes.............................................................. 1 bunch

 

 

Note: This recipe is originally designed for Japanese tastes.  Once  you are done combining all the ingredients, taste the gelato base before letting it harden.  If it is not sweet enough for you, add some more sugar and condensed milk in equal parts.

[Directions]

  1. Add some warm water to the Matcha (approximately 1 tablespoon) and mix until it is a smooth paste without any lumps.
  2. Slowly mix the milk into the Matcha little by little.  Transfer to a pot on the stove over low heat.  Mix in the sugar and condensed milk.  Simmer together, whisking and make sure to not let the milk boil.
  3. Strain the mixture through a fine strainer (such as a Matcha strainer) into a sheet pan.  Place in the freezer to chill and set.
  4. While it is setting, remove it from the freezer a few times and stir it with a whisk.  This will insure the final gelato is light and airy in addition to being creamy.
  5. When fully set, peel a few grapes, mix them into the gelato, and serve in a glass.
